The ultimate comfort food made healthy! These brownies have it all – the fudgy texture, the intense chocolate flavour and they’re terribly indulgent! Plus, they’re gluten free, sucrose free and oil/butter free! I mean, they literally tick every single box! It’s a win-win situation, with a side of chocolate.
It has been long known that chocolate is good for you. Well, it’s actually the cocoa that contains all the health benefits. Cocoa is rich in a group of phytochemicals called flavanols, which may improve blood flow and the function of our blood vessels. In fact, some studies have shown that cocoa can decrease stress and improve memory and immunity!
They are super easy to make, and what’s even better is you just have to throw all the ingredients in to one blender – so quick! To make the brownies gluten free use gluten free oats instead of flour. And to make them sucrose free, use a sweetener alternative. I used xylitol. Next time, I am going to try add less xylitol, and add in a mashed banana for natural sweetness.
These healthy brownies were baked to perfection after 20 minutes at 180 degrees Celsius. However, because ovens can differ greatly, I always recommend doing a toothpick test. For the toothpick test, insert a tooth pick (or skewer) into the brownie. You want the toothpick to come out with moist chocolatey crumbs. Don’t worry, it is not under baked. Remember, the brownie will continue to bake for a few minutes more even once it is out of the oven, so it is better to err on the side of under baking it to ensure that ‘ooey gooey’ texture!
Lastly, you have many options to top your brownies with. I mixed in dark chocolate disks. Alternatively you can use dark chocolate chips, nuts, or even mini marshmallows!
Ingredients
- 1 egg white
- 1 cup low fat chocolate chip yoghurt (you can use plain or vanilla as well)
- ½ cup cocoa powder
- ½ cup rolled oats
- ½ cup xylitol (or any sweetener of your choice)
- ¼ cup fat free milk
- 1 teaspoon coffee powder
- 1 teaspoon baking powder
- 5ml vanilla essence
Method
- Preheat oven to 180 degrees, and line a baking dish with baking paper (or spay well with Spay n Cook).
- Place all ingredients in a blender and blend well.
- Pour the batter into the baking dish.
- Place in the oven and bake for 20 minutes.
- Remove from oven and using a knife cut into even squares while still hot. Once cooled remove from the baking dish and store in an airtight container.
